  • ½ cup granulated sugar (for coating)
  • ½ teaspoon ground cinnamon (for coating)
  • ½ cup confectioners’ sugar (for glaze)
  • 1 tablespoon reduced cider (for glaze)

Instructions

  1. Reduce the apple cider in a saucepan until it thickens (about 10-15 minutes). Allow it to cool.
  2. In a bowl, whisk together flour, cinnamon, cloves, baking soda, and salt.
  3. Cream softened butter with brown and granulated sugars until fluffy. Beat in egg and vanilla extract along with 3 tablespoons of cooled reduced apple cider.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Chill the dough for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  7. Prepare cinnamon sugar by mixing granulated sugar and cinnamon in a separate bowl.
  8. Scoop dough into balls, roll in cinnamon sugar, and place on the baking sheet.
  9. Bake for about 10 minutes until edges are set but centers remain soft.
  10. Optional: Drizzle with glaze made from confectioners’ sugar and remaining reduced apple cider after cooling.
