Description

Authentic Chiles Rellenos are a delightful Mexican dish that brings a burst of flavor and color to your table. This recipe features roasted poblano peppers, generously stuffed with a savory blend of cheeses and spices, then lightly coated in a fluffy batter and fried to golden perfection.

  • 6 poblano peppers
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon oregano
  • 1 teaspoon garlic powder
  • 4 eggs (yolks & whites separated)
  • ½ cup diced onion
  • 8 oz. queso fresco (crumbled)
  • 8 oz. mozzarella cheese (shredded)
  • Oil for frying

Instructions

  1. Roast the poblano peppers on a griddle over medium-high heat until charred on all sides (about 15-20 minutes).
  2. Steam the peppers in a sealed plastic bag for 15-20 minutes to loosen skins.
  3. Peel the charred skins off each pepper and slice them open lengthwise, removing seeds.
  4. In a bowl, combine flour, salt, pepper, oregano, and garlic powder.
  5. Stuff each pepper with queso fresco, diced onion, and mozzarella cheese.
  6. Whip egg whites until soft peaks form, then gently fold in egg yolks until combined.
  7. Heat oil in a skillet over medium-high heat.
  8. Coat each stuffed pepper in the flour mixture followed by the egg mixture before frying until golden brown on both sides (about 3 minutes per side).
