- 1 cup all-purpose flour

- ½ teaspoon black pepper
- ½ teaspoon oregano
- 1 teaspoon garlic powder
- 4 eggs (yolks & whites separated)
- ½ cup diced onion
- 8 oz. queso fresco (crumbled)
- 8 oz. mozzarella cheese (shredded)
- Oil for frying
Instructions
- Roast the poblano peppers on a griddle over medium-high heat until charred on all sides (about 15-20 minutes).
- Steam the peppers in a sealed plastic bag for 15-20 minutes to loosen skins.
- Peel the charred skins off each pepper and slice them open lengthwise, removing seeds.
- In a bowl, combine flour, salt, pepper, oregano, and garlic powder.
- Stuff each pepper with queso fresco, diced onion, and mozzarella cheese.
- Whip egg whites until soft peaks form, then gently fold in egg yolks until combined.
- Heat oil in a skillet over medium-high heat.
- Coat each stuffed pepper in the flour mixture followed by the egg mixture before frying until golden brown on both sides (about 3 minutes per side).
