Description

Baileys Chocolate Cookies are a rich and delectable treat that will elevate any gathering. With their soft, cake-like texture, these cookies blend the indulgent flavors of chocolate and creamy goodness without using any pork or alcohol.


Ingredients

  • 3/4 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/4 cup fruit juice (as a substitute for Baileys)
  • 1 egg
  • 1.5 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 cup cocoa powder
  • 1 tsp cornstarch
  • 1.52 cups white chocolate chips (for topping)
  • Sprinkles (for decoration)

Instructions

  1. Cream the butter with both sugars until fluffy.
  2. Add fruit juice, egg, and vanilla; mix until combined.
  3. Gradually add dry ingredients except for chocolate chips and sprinkles; mix to form a thick dough.
  4. Scoop tablespoon-sized dough balls onto a parchment-lined cookie sheet and flatten slightly.
  5. Bake at 350°F for about 6 minutes until edges crack slightly.
  6. Cool on the sheet before transferring to a rack.
  7. Melt white chocolate chips; dip cookies and decorate with sprinkles as desired.
  8. Allow chocolate to set before enjoying!
