  • 1 1/2 cups shredded colby-jack or monterey jack cheese
  • 1/2 cup thick and chunky salsa
  • 1/2 tsp salt
  • 1/2 tsp lemon pepper
  • 1/2 tsp cumin
  • 1/2 tsp dark chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 18 corn tortillas
  • Cooking spray

Instructions

  1. Preheat oven to 375°F and spray a baking sheet with cooking spray.
  2. In a mixing bowl, combine chopped chicken, cheese, salsa, salt, lemon pepper, cumin, chili powder, garlic powder, and onion powder; mix well.
  3. Warm corn tortillas in the microwave covered with a damp paper towel for 10-15 seconds.
  4. Spoon about 2-3 tablespoons of filling onto each tortilla; roll tightly and place seam-side down on the baking sheet.
  5. Spray taquitos lightly with cooking spray and bake for about 20 minutes until golden brown.
