Ingredients
- 7 ounces short pasta (penne, rigatoni, etc.)
- 7 ounces feta cheese
- 3 cups cherry tomatoes
- 1 can chickpeas (15 oz)
- 2 cloves garlic (crushed)
- 2 tablespoons extra virgin olive oil
- Fresh basil leaves
- Dried oregano
- Zest of 1 lemon
- Salt and black pepper to taste
- Red pepper flakes
Instructions
- Preheat oven to 430°F (220°C). In a baking dish, combine cherry tomatoes, drained chickpeas, crushed garlic, olive oil, oregano, salt, black pepper, and red pepper flakes. Place the feta block in the center.
- Bake for 30–40 minutes until the feta is golden and tomatoes burst.
- Meanwhile, cook the short pasta in salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
- Once baked, mash together the baked feta and burst tomatoes into a creamy sauce. Stir in fresh basil and lemon zest.
- Add the drained pasta to the sauce and mix well. Use reserved pasta water to adjust consistency if needed.
