Ingredients
- 1 large boneless, skinless chicken breast (or thighs), cut into bite-sized pieces
- 1 tbsp olive oil
- 1 tsp sweet paprika
- ½ tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Sea salt and black pepper
- 4 flatbreads
- ¼ cup BBQ sauce
- 1 cup shredded mozzarella cheese
- 1 small red onion, finely sliced
- 1 small bell pepper, finely sliced
Instructions
- In a bowl, combine chicken with olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
- Heat a large frying pan over medium-high heat. Cook the marinated chicken for about 6 minutes until browned and cooked through. Set aside.
- Preheat your oven to 200°C (400°F).
- Line a baking tray with parchment paper and place flatbreads on it. Spread BBQ sauce over each flatbread.
- Evenly distribute mozzarella cheese on top of each flatbread followed by cooked chicken pieces, red onion slices, and bell pepper slices.
- Bake for about 8–10 minutes until the cheese is melted and bubbly.
