  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

  • 1 cup cooked quinoa
  • 1/2 cup BBQ sauce
  • 1/2 cup corn kernels
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup chopped cilantro
  • 1/4 cup sliced green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cube the sweet potatoes, toss with olive oil, salt, and pepper on a baking sheet lined with parchment paper.
  3. Roast in the oven for 25-30 minutes until tender.
  4. Season the chicken breasts with olive oil and spices, then cook in a skillet over medium heat for about 6-7 minutes per side until fully cooked (165°F internal temperature).
  5. Prepare quinoa according to package instructions and warm the BBQ sauce in a small saucepan.
  6. In a large bowl, combine cooked quinoa, corn, black beans, and roasted sweet potatoes. Top with sliced chicken and drizzle BBQ sauce before serving.
