  • 1 1/2 lbs ground beef
  • 1 large onion, chopped
  • 2432 corn tortillas
  • 1 lb cheddar cheese, grated
  • 1 can cream of chicken soup
  • 5 1/2 oz evaporated milk
  • 4 oz jar of pimientos
  • 4 oz can diced green chiles

Instructions

  1. In a large saucepan, brown the ground beef and chopped onions over medium heat. Drain excess fat.
  2. Stir in salt, cumin, and cheddar cheese until melted.
  3. Warm corn tortillas to make them pliable. Fill each tortilla with beef mixture and roll tightly.
  4. Place enchiladas seam-side down in a baking dish.
  5. In a double boiler, combine cream of chicken soup, evaporated milk, pimientos, green chiles, and Velveeta cheese until melted and smooth.
  6. Pour cheese sauce over enchiladas and bake uncovered at 350ºF for about 30 minutes or until bubbly.
