  • ½ white onion, diced

  • ¼ teaspoon ground ginger
  • ¼½ teaspoon crushed red pepper flakes (to taste)
  • 1 cup frozen peas and carrots
  • 6 green onions, chopped
  • 3 eggs, whisked
  • 1 cup pineapple chunks

Instructions

  1. In a large skillet over medium-high heat, cook ground beef until browned; break into small pieces. Transfer to a dish and cover.
  2. In the same skillet, add sesame oil and diced onions; sauté for 1-2 minutes until tender.
  3. Stir in cooked rice, soy sauce, garlic powder, ground ginger, and crushed red pepper flakes; cook for about 5-8 minutes until rice is browned.
  4. Add frozen peas and carrots along with pineapple chunks; stir and cook for an additional 2-3 minutes.
  5. Push mixture to one side of the pan; pour in whisked eggs on the empty side. Scramble until cooked through, then mix into the rice.
  6. Finally, add chopped green onions and the cooked beef back to the skillet; stir well before serving.
