  • 1 can (15 ounces) chickpeas
  • 1/4 cup vegan mayonnaise
  • 1/2 small lemon (juice)
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon turmeric
  • 1 clove garlic
  • 1/2 cup finely diced celery
  • 1/4 cup finely diced red onion
  • Fresh herbs (cilantro or parsley)

Instructions

  1. In a mixing bowl, whisk together the vegan mayonnaise, lemon juice, curry powder, cumin, turmeric, and black pepper. Add pressed or grated garlic and mix until combined. Adjust consistency with water if needed.
  2. Optionally rub chickpeas between layers of a towel to remove skins for easier mashing.
  3. Using a fork, partially mash about three-quarters of the chickpeas and leave some whole for added texture.
  4. In a large bowl, combine mashed chickpeas with diced celery, red onion, green onions, and fresh herbs. Pour dressing over the mixture and stir until well combined.
