Ingredients

Scale
  • 15.25 oz box of white cake mix
  • 3 egg whites
  • 1 cup water
  • 1/3 cup vegetable oil
  • 14 oz sweetened condensed milk
  • 3/4 cups white chocolate chips
  • 3 oz vegan strawberry gelatin
  • 2 cans (21 oz each) strawberry pie filling
  • 2 cups heavy whipping cream
  • 2 tablespoons sugar
  • Fresh strawberries for garnish

Instructions

  1. Preheat the oven according to the cake mix instructions. In a large bowl, combine the cake mix ingredients until smooth.
  2. Pour the batter into a greased 9×13 inch baking pan and bake as directed until done.
  3. Allow the cake to cool for 10 minutes, then poke holes all over the top with a fork.
  4. Mix sweetened condensed milk and melted white chocolate in another bowl. Dissolve vegan gelatin in warm water and add it to the milk mixture.
  5. Pour the filling over the cooled cake, ensuring it seeps into the holes. Chill in the refrigerator for at least an hour.
  6. In a chilled bowl, whip heavy cream with sugar until stiff peaks form, then spread it over the chilled poke cake.
  7. Garnish with sliced fresh strawberries before serving.
