Ingredients
- 4 large ears of sweet corn
- 2 jalapeños
- 1 tbsp flavorless oil
- 1 tbsp butter
- 1/4 cup sour cream
- 1/4 cup Mexican crema
- 3 tbsp mayo
- Juice of 1 lime
- 1/2 cup cotija cheese
- 1/2 cup queso fresco
- 1/2 tsp chili powder
- Splash of chicken broth if needed
- 1/2 cup grated pepper jack cheese
Instructions
- 1. Preheat oven to 350°F (175°C).
- 2. Cut kernels off the corn and set aside.
- 3. In a large pan, heat oil and butter over medium heat. Add corn and diced jalapeños; sauté for about 5 minutes until tender.
