  • 4 large ears of sweet corn
  • 2 jalapeños
  • 1 tbsp flavorless oil
  • 1 tbsp butter
  • 1/4 cup sour cream
  • 1/4 cup Mexican crema
  • 3 tbsp mayo
  • Juice of 1 lime
  • 1/2 cup cotija cheese
  • 1/2 cup queso fresco
  • 1/2 tsp chili powder
  • Splash of chicken broth if needed
  • 1/2 cup grated pepper jack cheese

Instructions

  1. 1. Preheat oven to 350°F (175°C).
  2. 2. Cut kernels off the corn and set aside.
  3. 3. In a large pan, heat oil and butter over medium heat. Add corn and diced jalapeños; sauté for about 5 minutes until tender.
  4. 4. In a mixing bowl, combine sautéed mixture with sour cream, Mexican crema, mayo, lime juice, cotija cheese, queso fresco, and chili powder. Mix well; add a splash of chicken broth if needed.
