  • 1 pound chicken sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced fire-roasted tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 12 ounces penne pasta
  • 4 ounces cream cheese, cubed
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook until browned (about 5 minutes). Remove the sausage from the skillet using a slotted spoon.
  2. In the same skillet, sauté the onion and bell pepper until softened (about 5 minutes). Stir in garlic and cook for an additional minute.
  3. Add diced tomatoes, chicken broth, heavy cream, and Cajun seasoning to the skillet. Bring to a boil.
  4. Stir in uncooked penne pasta. Reduce heat to medium-low, cover, and simmer until pasta is al dente (about 12-15 minutes).
  5. Uncover and mix in cream cheese and Parmesan until melted. Return cooked sausage to the skillet and combine thoroughly.
  6. Serve hot, garnished with fresh chopped parsley.
