- 3 tbsp rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 4 oz imitation crab meat
- 1 medium cucumber, sliced
- 1 ripe avocado, diced
- 2 tbsp low-sodium soy sauce
- Sriracha (optional)
Instructions
- Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
- Cook the rice with water according to package instructions until tender.
- Once cooked, transfer the rice to a mixing bowl while it's still warm.
- Add rice vinegar, sugar, and salt; mix gently until well combined.
- Slice the cucumber into thin rounds.
- Dice the avocado into bite-sized pieces; set aside along with other toppings.
- In serving bowls, layer a generous scoop of seasoned sushi rice as the base.
- Top with sliced cucumber, diced avocado, and imitation crab meat.
- Drizzle low-sodium soy sauce over each bowl.
