- 2 large carrots (peeled)
- 4 tablespoons milk powder (24 g)
- 2 packs active dry yeast (14 g)
- 700 g bread flour (~5 cups)
- 1/2 cup granulated sugar (100 g)
- 2 teaspoons salt
- 2 large eggs
- 113 g softened butter
- 113 g softened butter (for filling)
- 2 tablespoons cinnamon
- 200 g granulated sugar (for filling)
- 2 tablespoons heavy cream
- 1 tablespoon vanilla bean paste or 1 teaspoon vanilla extract
- ¼ teaspoon almond extract (optional)
- 120 g confectioners’ sugar sifted
- ¼ teaspoon salt
Instructions
- In a stand mixer bowl, combine warm water, bread flour, milk, grated carrots, milk powder, and yeast. Let sit for 10 minutes until frothy.
- Add remaining bread flour, sugar, salt, eggs, and butter. Mix on low speed until combined; then knead on medium speed until smooth.
- Place dough in a greased bowl; cover and let rise in a warm place until doubled (about 90 minutes).
- While rising, mix softened butter, cinnamon, sugar, and vanilla for the filling.
- Punch down the risen dough and roll it into a rectangle (16×12 inches). Spread filling evenly and roll tightly.
- Cut into 12 pieces and place cut-side up on a parchment-lined baking sheet; let rise again for 30 minutes.
- Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
- Prepare frosting by blending softened butter, cream cheese, heavy cream, vanilla extract, confectioners’ sugar, and salt until smooth.
- Once buns cool slightly but are still warm, frost generously before serving.
