  • 40 g bread flour
  • 1 cup milk
  • 2 large carrots (peeled)
  • 4 tablespoons milk powder (24 g)
  • 2 packs active dry yeast (14 g)
  • 700 g bread flour (~5 cups)
  • 1/2 cup granulated sugar (100 g)
  • 2 teaspoons salt
  • 2 large eggs
  • 113 g softened butter
  • 113 g softened butter (for filling)
  • 2 tablespoons cinnamon
  • 200 g granulated sugar (for filling)
  • 2 tablespoons heavy cream
  • 1 tablespoon vanilla bean paste or 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • 120 g confectioners’ sugar sifted
  • ¼ teaspoon salt

Instructions

  1. In a stand mixer bowl, combine warm water, bread flour, milk, grated carrots, milk powder, and yeast. Let sit for 10 minutes until frothy.
  2. Add remaining bread flour, sugar, salt, eggs, and butter. Mix on low speed until combined; then knead on medium speed until smooth.
  3. Place dough in a greased bowl; cover and let rise in a warm place until doubled (about 90 minutes).
  4. While rising, mix softened butter, cinnamon, sugar, and vanilla for the filling.
  5. Punch down the risen dough and roll it into a rectangle (16×12 inches). Spread filling evenly and roll tightly.
  6. Cut into 12 pieces and place cut-side up on a parchment-lined baking sheet; let rise again for 30 minutes.
  7. Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
  8. Prepare frosting by blending softened butter, cream cheese, heavy cream, vanilla extract, confectioners’ sugar, and salt until smooth.
  9. Once buns cool slightly but are still warm, frost generously before serving.
