Ingredients
- 3 pounds russet potatoes, peeled and cubed
- 1/2 cup unsalted butter
- 1 cup sour cream
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped green onions
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1/2 cup crispy fried onions (optional)
- 1 tablespoon olive oil or butter (for greasing the baking dish)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil or butter.
- Boil peeled and cubed russet potatoes in a large pot until tender, about 10–15 minutes. Drain and set aside.
- In a mixing bowl, combine melted unsalted butter, sour cream, heavy cream, cheddar cheese, mozzarella cheese, chopped green onions, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
- Gently fold the boiled potatoes into the cheese mixture until evenly coated.
- Transfer the mixture to the greased baking dish and top with crispy fried onions if desired.
- Bake for 30–35 minutes or until golden brown and bubbly.
