  • 3 boneless, skinless chicken breasts
  • 1 tablespoon cajun seasoning
  • 1 tablespoon ranch seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 foot-long sub loaves
  • 3 tablespoons salted butter, melted
  • 1 tablespoon garlic powder
  • 1 teaspoon dried parsley
  • ½ cup ranch dressing
  • 1½ cups shredded colby cheese
  • 23 green onions, sliced (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix diced chicken with cajun seasoning, ranch seasoning, salt, and black pepper.
  3. In a skillet over medium heat, cook seasoned chicken until fully cooked (165°F internal temperature).
  4. Slice sub loaves in half lengthwise and scoop out some bread.
  5. Brush inside with melted butter mixed with garlic powder and parsley.
  6. Spread ranch dressing inside each loaf and layer with cheese.
  7. Add cooked chicken and remaining cheese; bake for 10-12 minutes until cheese is bubbly.
  8. Drizzle with extra ranch if desired, serve warm.
