  • 6 ounces cream cheese (softened)
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup baby spinach leaves (chopped)
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • salt and freshly ground black pepper (to taste)
  • 1520 corn or flour tortillas
  • guacamole
  • sour cream
  • salsa
  • hot sauce

Instructions

  1. In a mixing bowl, combine the softened cream cheese, salsa, and sour cream until smooth. Add the shredded chicken, cheddar cheese, chopped spinach, cumin, garlic powder, chili powder, salt, and pepper. Mix well.
  2. Heat each tortilla on a non-stick griddle until soft and pliable.
  3. Place a spoonful of filling along each tortilla and roll tightly.
  4. For baked taquitos, preheat the oven to 425°F (220°C) and bake for 15–20 minutes until crispy. For fried taquitos, heat oil in a skillet and fry until golden brown.
  5. Serve warm with guacamole and salsa.
