  • 1 pound boneless, skinless chicken thighs or breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper (sliced)
  • 1 cup broccoli florets
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame oil
  • 3 green onions (sliced for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a small saucepan, combine soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil. Mix cornstarch with water and add to the saucepan. Simmer until thickened.
  2. Heat vegetable oil in a large skillet over medium-high heat. Cook chicken for 5–7 minutes until browned.
  3. Add bell pepper and broccoli; stir-fry for another 3–4 minutes. Then add pineapple chunks and teriyaki sauce; cook for an additional 2–3 minutes until heated through.
  4. Serve over cooked rice and garnish with green onions and sesame seeds.
