Ingredients
- 2 cups cooked rice (white or brown)
- 1 pound boneless, skinless chicken thighs or breasts
- 1 cup pineapple chunks (fresh or canned)
- 1 bell pepper (sliced)
- 1 cup broccoli florets
- 2 tablespoons vegetable oil
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 tablespoon sesame oil
- 3 green onions (sliced for garnish)
- Sesame seeds (for garnish)
Instructions
- In a small saucepan, combine soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil. Mix cornstarch with water and add to the saucepan. Simmer until thickened.
- Heat vegetable oil in a large skillet over medium-high heat. Cook chicken for 5–7 minutes until browned.
- Add bell pepper and broccoli; stir-fry for another 3–4 minutes. Then add pineapple chunks and teriyaki sauce; cook for an additional 2–3 minutes until heated through.
- Serve over cooked rice and garnish with green onions and sesame seeds.
