  • 1/2 cup grated Parmesan cheese

  • 1 tsp cajun seasoning
  • 1 tsp lemon pepper
  • Kosher salt to taste
  • 1 cup plain panko breadcrumbs
  • 1/3 cup vegetable or canola oil for frying
  • 1/2 cup tomatoes (chopped)
  • 1/2 cup red onion or shallot (finely diced)
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tbsp lemon juice
  • 1 tbsp fresh lemon zest

Instructions

  1. Cook linguine according to package instructions until al dente; drain and set aside.
  2. Season shrimp with Cajun seasoning, lemon pepper, and kosher salt; coat with panko breadcrumbs.
  3. Heat vegetable oil in a frying pan over medium heat and fry shrimp until golden brown; transfer to a cooling rack.
  4. In a large nonstick skillet, melt butter and sauté chopped tomatoes, onions, parsley, and garlic until fragrant. Deglaze with grape juice.
  5. Stir in heavy cream; bring to a simmer and season with salt, pepper, Parmesan cheese, lemon juice, Cajun seasoning, and lemon pepper.
