  • ½ cup diced onion
  • 3 cups beef broth
  • ¾ cup uncooked macaroni
  • ½ cup heavy cream
  • ¾ cup shredded pepper jack and cheddar cheese blend
  • 1 tsp garlic powder
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • ½ tsp paprika
  • ¾ cup sliced peeled carrots
  • 2 Tbsp tomato paste

Instructions

  1. Brown the ground beef in an Instant Pot or skillet over medium heat until fully cooked. Drain any excess fat.
  2. Stir in the diced onion, sliced carrots, garlic powder, kosher salt, black pepper, Italian seasoning, and paprika until well combined.
  3. Add the beef broth and uncooked macaroni to the pot; stir gently.
  4. If using an Instant Pot, close the lid and cook on high pressure for 3 minutes; if slow cooking, let it simmer on low for about an hour.
  5. Once cooked, release pressure (if using an Instant Pot), then stir in tomato paste followed by heavy cream. Gradually add shredded cheese while stirring until melted.
  6. Serve hot with your choice of bread or crackers.
