Ingredients

  • salt and pepper
  • 16 oz potato gnocchi
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • ½ teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 5 oz fresh spinach
  • 1/4 teaspoon salt (to taste)
  • coarsely ground black pepper (to taste)
  • red pepper flakes (to taste)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced crimini mushrooms, seasoning with salt and pepper, and sauté until tender (about 5 minutes).
  2. Stir in minced garlic and cook until fragrant (about 1 minute).
  3. Pour in chicken broth and bring to a simmer. Add potato gnocchi, stirring to combine.
  4. Reduce heat to low; mix in heavy cream, Italian seasoning, fresh spinach, salt, and pepper. Cook for 5–7 minutes until the sauce thickens slightly.
