- 1 pound ground chicken
- 2 1/2 tablespoons canola oil
- 1/2 medium sweet onion (diced)
- 3 cloves garlic (minced)
- 1 (4.5-ounce) can chopped green chiles
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- Kosher salt and freshly ground black pepper (to taste)
- 1 1/2 cups shredded Mexican cheese blend
- 8 flour or corn tortillas (warmed)
- Pico de gallo

Instructions
- Preheat oven to 425°F and lightly oil a baking sheet.
- In a skillet, heat 1 tablespoon canola oil over medium-high heat. Add ground chicken, onion, and garlic; cook until browned (3–5 minutes). Drain excess fat.
- Stir in green chiles, chili powder, smoked paprika, oregano, and cumin; cook for another 1–2 minutes until fragrant.
- Remove from heat and mix in cilantro and lime juice; season to taste. Incorporate 1 cup of shredded cheese.
- Spread chicken mixture on half of each tortilla; top with cheese before folding over.
- Arrange tacos on the baking sheet and brush tops with remaining oil.
