Ingredients
- 1 pound cauliflower florets
- 1 pound extra lean ground beef
- 1/4 cup tomato paste
- 2 tablespoons honey
- 2 tablespoons chili crunch
- 2 tablespoons soy sauce or coconut aminos
- 2 tablespoons black vinegar or rice vinegar
- 4 scallions
- 1 1/2 tablespoons olive oil
Instructions
- In a mixing bowl, combine tomato paste, chili crunch, honey, soy sauce, vinegar, water, and scallion whites. Set aside.
- Heat olive oil in a large skillet over medium-high heat; add cauliflower florets and sauté until browned (4-5 minutes). Transfer to a bowl and cover.
- In the same skillet, add remaining olive oil and brown the ground beef (3-4 minutes). Break apart with a spatula until no pink remains.
- Pour the prepared sauce over the beef; stir well and cook until thickened (1-2 minutes).
- Add steamed cauliflower back into the skillet; toss to combine.
- Garnish with scallion greens before serving.
