Ingredients

  • 1 pound cauliflower florets
  • 1 pound extra lean ground beef
  • 1/4 cup tomato paste
  • 2 tablespoons honey
  • 2 tablespoons chili crunch
  • 2 tablespoons soy sauce or coconut aminos
  • 2 tablespoons black vinegar or rice vinegar
  • 4 scallions
  • 1 1/2 tablespoons olive oil

Instructions

  1. In a mixing bowl, combine tomato paste, chili crunch, honey, soy sauce, vinegar, water, and scallion whites. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat; add cauliflower florets and sauté until browned (4-5 minutes). Transfer to a bowl and cover.
  3. In the same skillet, add remaining olive oil and brown the ground beef (3-4 minutes). Break apart with a spatula until no pink remains.
  4. Pour the prepared sauce over the beef; stir well and cook until thickened (1-2 minutes).
  5. Add steamed cauliflower back into the skillet; toss to combine.
  6. Garnish with scallion greens before serving.
