Ingredients
- 5 dried ancho chiles
- 4 dried guajillo chiles
- 4.5 to 5 lbs boneless beef chuck roast
- 1 quart beef broth
- 3 Tbsp avocado oil
- Corn tortillas
- Grated mozzarella cheese or Oaxaca cheese
- 1 Tbsp black peppercorns
- 1 Tbsp coriander seed
- 2 bay leaves
- 1 cinnamon stick
- 1 large yellow onion
- 8 cloves garlic (minced)
- â…“ cup apple cider vinegar
- 1 Tbsp dried oregano
- 3 Tbsp tomato paste
- 1 Tbsp ground cumin
- 2 Tbsp sea salt (to taste)
Instructions
- Rehydrate the dried chiles in boiling water for about 15 minutes.
- Toast black peppercorns, coriander seeds, bay leaves, and cinnamon stick in a skillet; create a spice packet.
- Sear the beef chuck roast in avocado oil until golden brown on all sides and transfer to the slow cooker.
- Sauté onions and garlic in the same skillet; add tomato paste, cumin, and oregano before transferring to the crock pot.
- Combine rehydrated chiles (and soaking water), beef broth, vinegar, and spice packet in the slow cooker; stir well and cook on low for 8–10 hours.
- Shred the beef once cooked; blend chilis with some liquid for a smooth sauce.
- Fry corn tortillas dipped in birria sauce with cheese and meat for crispy tacos.
