Ingredients
- 1 1/2 lb boneless skinless chicken breast
- 1/2 cup chicken broth
- 1 pkg dry ranch dressing mix
- 8 oz cream cheese (cubed)
- 1 1/2 cup shredded cheddar cheese
- 1 cup heavy cream
- 2 cups spinach (chopped)
- 1 lb rotini pasta
Instructions
- Season the chicken breasts with black pepper and place them in the slow cooker.
- Pour the chicken broth around the chicken, then sprinkle the ranch dressing mix on top.
- Cube and add the cream cheese on top of the chicken.
- Cover and cook on low for 5-6 hours or high for 3-4 hours until cooked through.
- Remove cooked chicken, shred it, and return it to the slow cooker along with cheddar cheese, heavy cream, chopped spinach.
- Mix well and cook for another 30 minutes.
- Meanwhile, cook rotini pasta according to package directions until al dente; drain.
- Combine pasta with the chicken mixture in the slow cooker, stirring until evenly coated. Serve hot.
