  • 1 lb ground beef
  • ½ cup diced onion

  • 2 cups low sodium beef broth
  • 15 oz can tomato sauce
  • 1 cup dry white rice
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large sauté pan over medium-high heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks (about 10 minutes).
  3. Stir in onions and garlic; sauté for 3 minutes until fragrant.
  4. Add diced bell peppers, beef broth, tomato sauce, rice, and seasonings; mix well.
  5. Cover and bring to a boil (approximately 5 minutes).
  6. Reduce heat to medium; cover and cook for 20-25 minutes until liquid is absorbed and rice is tender.
  7. Top with mozzarella cheese; cover until melted.
