- 2 cups long-grain white or brown rice
- 2 cups chicken broth
- 1.5 lbs boneless skinless chicken (breast or thighs)
- 1 tablespoon olive oil
- 1 medium onion (sliced)
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 packet fajita seasoning
- 1 cup shredded cheddar or Mexican blend cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté sliced onions until translucent. Add chicken pieces and cook until browned. Stir in sliced bell peppers and cook until slightly tender.
- In an oven-safe baking dish, layer the rice at the bottom and pour chicken broth over it. Add the sautéed chicken and veggies on top, then sprinkle fajita seasoning evenly.
- Cover with foil and bake for 30 minutes. Remove foil, stir gently, sprinkle cheese on top, and bake uncovered for an additional 15 minutes until cheese is melted.
- Allow to cool slightly before serving.
