- 12 mini flour tortillas (warmed)

- 1 avocado (halved, peeled, seeded and diced)
- 1/2 cup chopped fresh cilantro leaves
- 1 lime (cut into wedges)
Instructions
- In a small bowl, mix chili powder, cumin, smoked paprika, oregano, garlic powder, salt, and pepper.
- Season the chicken thighs evenly with the spice mixture.
- Heat canola oil in a cast iron skillet over medium-high heat. Cook the seasoned chicken until golden brown and internal temperature reaches 165°F (about 4-5 minutes per side). Let cool before dicing.
- Warm mini tortillas and assemble tacos by filling them with diced chicken and topping with pico de gallo, avocado, cilantro, and lime wedges.
