- 2 lbs boneless chicken thighs
- 1/2 cup coconut aminos
- 1/4 cup pineapple juice
- 1/4 cup tomato paste
- 4–6 pitted dates (or 1/4 cup maple syrup)
- 2 tsp garlic powder
- 2 tsp chili powder
- 1 tsp smoked paprika
- White rice or cauli rice
- Mixed greens
- Chopped green onions (for topping)
Instructions
- Soak dates in warm water for about 10 minutes; drain.
- Blend dates, coconut aminos, pineapple juice, tomato paste, and seasonings until smooth.
- Place chicken in a shallow dish and pour marinade over it. Toss to coat; refrigerate for at least 30 minutes (up to 24 hours).
