  • 1 Lb Package Ground Turkey
  • 2 Tablespoons Olive Oil
  • 1/2 White Onion – chopped
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Dried Thyme
  • 14 ounces Can Diced Tomatoes (low sodium)
  • 1/2 Head Small Green Cabbage – chopped
  • 1½ Cups Water
  • 1 Cup Quick Cook Rice
  • 1 Cup Shredded Cheddar Jack Cheese
  • Chopped Parsley
  • Salt To Taste
  • Pepper To Taste

Instructions

  1. In a large Dutch oven over medium-high heat, brown the ground turkey with olive oil and chopped onion until fully cooked.
  2. Lower the heat to medium and add garlic powder, dried thyme, salt, and pepper; stir well.
  3. Incorporate diced tomatoes and water; bring to a boil.
  4. Add chopped cabbage and quick-cook rice; cover and reduce heat to medium-low for about 10 minutes until rice is tender.
  5. Top with shredded cheese and cover for 1-2 minutes until melted.
  6. Remove from heat, garnish with parsley, and serve.
