  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup chopped semi-sweet chocolate or mini chocolate chips

Instructions

  1. In a stainless steel pan over medium heat, brown the butter until it turns amber (about 10 minutes). Transfer to a mixing bowl.
  2. Stir in ground espresso and let cool for 20-30 minutes.
  3. Whisk together both sugars into the cooled butter mixture until combined.
  4. Add the egg, egg yolk, and vanilla extract; whisk until fully incorporated.
  5. Gently fold in flour, baking soda, salt, and chocolate until just combined; do not overmix.
  6. Scoop dough onto a parchment-lined baking tray and chill in the freezer for at least 3-4 hours (or overnight).
  7. Preheat oven to 350°F (180°C). Bake for 10-12 minutes until edges are golden.
  8. Allow cooling on a wire rack before serving.
