  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • Tzatziki sauce (made with Greek yogurt, grated cucumber, garlic, and fresh dill)

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, garlic powder, oregano, basil, salt, pepper, and red pepper flakes in a bowl.
  2. Pound chicken breasts to uniform thickness and marinate for at least 30 minutes.
  3. In another bowl, mix Greek yogurt with grated cucumber, lemon juice, olive oil, garlic, salt, and fresh dill to make the tzatziki sauce.
  4. Cook rice or quinoa according to package instructions while chopping your vegetables.
  5. Preheat air fryer to 380°F and cook marinated chicken for about 10 minutes until fully cooked through.
  6. Allow the chicken to rest before slicing it thinly. Assemble bowls with rice or quinoa as the base topped with vegetables and sliced chicken. Finish with a generous dollop of tzatziki sauce.
