- 2 cloves garlic
- 1/2 jalapeño pepper
- 1 tablespoon fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1/2 cup olive oil
- Salt and pepper to taste
Instructions
- In a food processor, blend cilantro, parsley, oregano, shallot, garlic, and jalapeño until finely chopped.
- Add lemon juice, apple cider vinegar, olive oil, salt, and pepper. Pulse until combined.
- Place chicken thighs in a baking dish; season with salt and pepper. Cover with 1/4 cup chimichurri sauce and marinate for at least 20 minutes (up to overnight).
- Preheat grill to medium-high heat. Grill chicken thighs for about 5-6 minutes per side or until juices run clear.
- Serve hot with additional chimichurri on the side.
