Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup diced onion
- 1 tablespoon minced garlic
- 1 cup diced red bell pepper
- 1 cup diced carrots
- 1 cup green peas (thawed)
- 2 cups cooked brown rice
- 2 eggs
- 1 tablespoon olive oil
- ½ cup coconut aminos
Instructions
- Cook the brown rice according to package directions.
- In a large pan, heat olive oil over medium heat and sauté chicken until fully cooked (about 10 minutes). Remove from pan.
- In the same pan, sauté onions and garlic for about 5 minutes until fragrant.
- Add red bell pepper and carrots; stir-fry for an additional 3 minutes.
- Push veggies to one side; scramble eggs on the other side until fully cooked.
- Combine everything in the pan: chicken, veggies, rice, peas, and seasonings. Stir well until heated through.
