  • 4 cups fusilli pasta
  • 1 tablespoon olive oil
  • 3 cups corn kernels
  • 1 jalapeno, finely diced
  • 2 tablespoons fresh cilantro
  • 1/2 cup cotija cheese (or feta cheese), divided
  • 1/2 teaspoon chili powder
  • lime wedges, for serving
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 3 tablespoons lime juice
  • 1/2 teaspoon coconut aminos
  • 1/4 teaspoon chili powder
  • salt to taste

Instructions

  1. Cook the fusilli pasta in salted boiling water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Sauté corn for 3-5 minutes until slightly charred, then add the diced jalapeno and cook for an additional minute. Remove from heat.
  3. In a bowl, whisk together Greek yogurt, mayonnaise, lime juice, coconut aminos, chili powder, and half of the cotija cheese until smooth.
  4. In a large bowl, combine cooked pasta with sautéed corn and jalapeno mixture. Drizzle dressing over the top and toss gently to coat.
  5. Garnish with remaining cotija cheese and chopped cilantro before serving.
