  • 1 pound lean ground turkey

  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper (to taste)
  • 2 cups chopped romaine or iceberg lettuce
  • 1 cup corn (fresh, grilled, or frozen and thawed)
  • 1 avocado (sliced or guacamole)
  • 1/2 cup salsa
  • Fresh cilantro (chopped)
  • Lime wedges
  • 1 cup black beans (rinsed and drained)
  • â…“ cup light Greek yogurt

Instructions

  1. Cook the rice according to package instructions using chicken or vegetable broth for added flavor.
  2. In a skillet over medium heat, warm olive oil and add the ground turkey. Cook until browned (5-6 minutes). Stir in spices and simmer for another 8-10 minutes.
  3. Warm corn (and black beans if using) in a small saucepan over low heat.
