- 3 tablespoons low sodium soy sauce or tamari
- 2 tablespoons honey
- 2 tablespoons sriracha
- 2 teaspoons minced garlic
- 3 tablespoons water
- 2 cups cooked white rice
- 1 avocado
- 1 cucumber (sliced)
- 1 cup edamame (cooked)
- 1/2 cup sriracha mayo
Instructions
- Cut salmon into 1-inch cubes, removing the skin if desired.
- In a mixing bowl, whisk together soy sauce or tamari, honey, sriracha, minced garlic, and water to create the marinade.
- Add cubed salmon to the marinade and let it sit for at least 20 minutes.
- Heat a skillet over medium heat with oil and cook the marinated salmon cubes for 2–3 minutes on each side until crispy.
- Pour in the reserved marinade and cook until it thickens slightly.
- Assemble bowls by placing cooked rice at the bottom and topping with salmon, avocado slices, cucumber, and edamame. Drizzle with sriracha mayo.
