  • ½ cup pineapple juice (not fresh)
  • ½ cup tomato ketchup
  • ½ cup light brown sugar
  • ¼ cup soy sauce
  • 2 tablespoons unseasoned rice vinegar
  • 1 tablespoon sesame oil (not toasted)
  • 12 teaspoons Sriracha (to taste)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 pounds boneless skinless chicken thighs

Instructions

  1. In a large bowl, whisk together the pineapple juice, ketchup, brown sugar, soy sauce, rice vinegar, sesame oil, Sriracha, garlic, and ginger until well combined.
  2. Pour half of the marinade over the chicken thighs in a mixing bowl, ensuring they are coated evenly. Cover and marinate in the fridge for at least 30 minutes or up to 24 hours.
  3. Preheat your grill to medium-high heat and oil the grill grates.
  4. Remove the chicken from the marinade and place it on the grill. Cook for about 3 minutes on one side before flipping and cooking for another 2 minutes.
  5. Baste the chicken with reserved marinade after flipping and repeat two more times until fully cooked (internal temperature should reach 165°F).
  6. Let the chicken rest for about 5 minutes before slicing. Serve with grilled pineapple or pineapple salsa.
