Ingredients
- ½ cup pineapple juice (not fresh)
- ½ cup tomato ketchup
- ½ cup light brown sugar
- ¼ cup soy sauce
- 2 tablespoons unseasoned rice vinegar
- 1 tablespoon sesame oil (not toasted)
- 1–2 teaspoons Sriracha (to taste)
- 3 cloves garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 2 pounds boneless skinless chicken thighs
Instructions
- In a large bowl, whisk together the pineapple juice, ketchup, brown sugar, soy sauce, rice vinegar, sesame oil, Sriracha, garlic, and ginger until well combined.
- Pour half of the marinade over the chicken thighs in a mixing bowl, ensuring they are coated evenly. Cover and marinate in the fridge for at least 30 minutes or up to 24 hours.
- Preheat your grill to medium-high heat and oil the grill grates.
- Remove the chicken from the marinade and place it on the grill. Cook for about 3 minutes on one side before flipping and cooking for another 2 minutes.
- Baste the chicken with reserved marinade after flipping and repeat two more times until fully cooked (internal temperature should reach 165°F).
- Let the chicken rest for about 5 minutes before slicing. Serve with grilled pineapple or pineapple salsa.
