Ingredients
- 3 cups Shredded Chicken
- 1 packet Taco Seasoning
- 1 cup Sour Cream
- 2 cups Shredded Cheddar Cheese
- 16 oz Cubed Velveeta
- 1 can Diced Tomatoes with Green Chilies
- 8 Tortillas
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine shredded chicken and taco seasoning. Stir in sour cream and half of the cheddar cheese until well mixed.
- Place about 1/4 cup of filling in each tortilla, roll them tightly, and place seam-side down in a greased baking dish.
- In a saucepan over medium heat, melt Velveeta with diced tomatoes and green chilies until smooth; pour over enchiladas.
- Top with remaining cheddar cheese, cover with foil, and bake for 20 minutes. Remove foil and bake for another 5 minutes until bubbly.
