  • 1/2 lb chicken (cut into quarter pieces)
  • 1 onion (finely chopped)
  • 1/2 cabbage (roughly chopped)
  • 1/2 lb potatoes (washed and diced)
  • 1 carrot (peeled and finely sliced)
  • 4 to 5 cups chicken stock
  • 1 bay leaf
  • Kosher salt and black pepper (to taste)
  • Parsley (chopped)

Instructions

  1. In a large pot over medium heat, cook the chicken until crispy (5-7 minutes). Use a slotted spoon to remove it from the pot and set aside.
  2. Add chopped onion to the same pot; sauté for 3-4 minutes until softened. Stir in sliced carrot and cook for another 2 minutes.
  3. Add diced potatoes and chopped cabbage; season with salt and pepper. Sauté for 3-4 minutes.
  4. Pour in chicken stock and add the bay leaf. Bring to a boil, then reduce heat and simmer for 15-20 minutes until vegetables are tender.
  5. Return cooked chicken to the pot, stir well, and adjust seasoning if needed.
  6. Serve hot, garnished with chopped parsley.
