  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup whole buttermilk
  • 3/4 cup granulated sugar (for glaze)
  • 1/3 cup unsalted butter (for glaze)
  • 1/4 cup fruit juice (as a bourbon substitute)
  • 1 tablespoon water (for glaze)
  • 2 teaspoons vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F and prepare a 10-inch Bundt pan with baking spray.
  2. Cream together softened butter and granulated sugar in a stand mixer until light and fluffy (about 4-5 minutes).
  3. Add eggs one by one, mixing until incorporated; then add vanilla extract.
  4. In a separate bowl, whisk together flour, salt, baking powder, and baking soda.
  5. Gradually mix dry ingredients into the wet mixture alternately with buttermilk until just combined.
  6. Pour the batter into the prepared Bundt pan and bake for 55-60 minutes or until golden brown.
  7. Prepare the glaze by heating sugar, butter, fruit juice, water, and vanilla in a saucepan until dissolved.
  8. Once the cake is baked, poke holes in it and pour half of the glaze over the top; let cool before serving.
