  • 1 tablespoon gochujang (for the sauce)
  • 1 tablespoon rice vinegar (for the sauce)
  • 1 tablespoon sesame oil (for the sauce)
  • 1 teaspoon garlic, minced (for the sauce)
  • 1 teaspoon ginger, minced (for the sauce)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (to thicken)
  • ½ cup mayonnaise (for the dip)
  • 1 tablespoon gochujang (for the dip)
  • 1 tablespoon lime juice (for the dip)
  • 1 teaspoon honey (for the dip)
  • ½ teaspoon garlic powder (for the dip)

Instructions

  1. Preheat your oven to 400°F (200°C). In a mixing bowl, combine ground beef (or chicken), panko breadcrumbs, soy sauce, gochujang, egg, minced garlic, grated ginger, brown sugar, sesame oil, salt, black pepper, and chopped green onions. Mix gently until just combined.
  2. Form the mixture into meatballs about 1 to 1.5 inches in diameter and place them on a baking sheet lined with parchment paper.
  3. Bake for approximately 25 minutes until cooked through and browned.
  4. For the sauce, combine soy sauce, honey (or brown sugar), gochujang, rice vinegar, sesame oil, minced garlic, minced ginger, and cornstarch mixture in a saucepan over medium heat until thickened.
