  • 2 cooked and cubed chicken breasts
  • 6 medium red potatoes, cubed with skin on
  • 1 minced garlic clove
  • 3 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 tablespoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups shredded sharp cheddar cheese
  • ½ cup sliced green onions

Instructions

  1. Preheat the oven to 375°F. Spray a 9 x 13-inch casserole dish with cooking spray.
  2. In a mixing bowl, combine cubed potatoes, cooked chicken, minced garlic, olive oil, paprika, parsley, oregano, cayenne pepper, salt, and pepper. Mix until well coated.
  3. Transfer the mixture to the prepared baking dish and bake for about 45-50 minutes until the potatoes are tender.
  4. Remove from the oven and top with shredded cheese and green onions. Return to the oven for another 5-10 minutes until the cheese is melted and bubbly.
