  • 1 lb Rigatoni pasta
  • 16 oz Mushrooms (sliced)
  • 2 cups Cooked chicken (diced)
  • 1½ cup Heavy cream
  • ½ cup Chicken stock
  • 2 tbsp Olive oil
  • 3 tbsp Parmesan cheese (grated)
  • 1 Chopped onion
  • 2 tbsp Butter
  • 3 tbsp Balsamic vinegar
  • 2 tbsp Fresh chopped basil
  • 2 tsp Minced garlic
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Cook the rigatoni in salted boiling water until al dente, then drain and set aside.
  2. In a skillet over medium heat, combine olive oil and butter. Sauté chopped onion and minced garlic until fragrant.
  3. Add sliced mushrooms and cooked chicken; cook until mushrooms are tender.
  4. Pour in heavy cream and chicken stock, then stir in balsamic vinegar. Simmer for about 5 minutes until slightly thickened.
  5. Toss the cooked rigatoni into the skillet with the sauce, ensuring it’s evenly coated. Season with salt and black pepper to taste.
  6. Serve warm, garnished with fresh basil and grated Parmesan cheese.
