  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • heaping 1/4 tsp salt
  • zest of two fresh limes
  • 1/4 cup quality lime juice
  • 1/2 cup butter (softened)
  • 1/2 cup butter flavored shortening
  • 45 cups powdered sugar
  • 2 tbsp agave syrup
  • 1 tsp fresh lime juice
  • green food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Add eggs one at a time, beating well after each addition.
  3. In another bowl, whisk together flour, baking powder, salt, and lime zest. Gradually add to the wet mixture alternating with lime juice until just combined.
  4. Fill cupcake liners about two-thirds full and bake for approximately 18 minutes or until a toothpick comes out clean.
  5. Allow cupcakes to cool on a wire rack before frosting.
  6. For frosting, beat softened butter and shortening until creamy. Gradually add powdered sugar along with agave syrup and lime juice; mix until smooth.
