Ingredients

Scale
  • 1 cup (2 sticks / 227 g) unsalted butter
  • 1 ¼ cups (250 g) light brown sugar
  • ½ cup (100 g) granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • 2 cups (256 g) all-purpose flour
  • 1 cup (90 g) old-fashioned oats
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground cinnamon
  • 1 cup (168 g) white chocolate chips
  • 1 cup (168 g) semi-sweet chocolate chips

Instructions

  1. In a medium saucepan over medium-low heat, melt the unsalted butter until it turns chestnut brown and has a nutty aroma (about 6-7 minutes). Remove from heat.
  2. Stir in light brown sugar and granulated sugar until smooth. Chill the mixture for 10 minutes.
  3. Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper.
  4. Incorporate room temperature eggs and vanilla extract into the cooled butter mixture until fully combined.
  5. Gradually add flour, oats, baking soda, salt, and cinnamon, mixing until just combined.
  6. Fold in both types of chocolate chips gently.
  7. Scoop dough onto prepared baking sheets (2 inches apart) and press each down slightly.
  8. Bake for 11-13 minutes or until edges are golden brown. Allow cookies to cool before transferring to a wire rack.
