  • 3 cups crushed tortilla chips
  • 15 oz. black beans (drained and rinsed)
  • 2 cups chopped cooked chicken
  • 21 oz. cream of chicken soup
  • 10 oz. can Rotel tomatoes (undrained)
  • 2 cups shredded jack cheese
  • 2 cups shredded medium cheddar cheese
  • Fresh cilantro and diced tomatoes for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 13×9 inch baking dish.
  2. Lightly crush tortillas and layer about 1 cup on the bottom of the dish.
  3. Add diced chicken and black beans over the tortilla layer.
  4. Mix cumin into the cream of chicken soup, then spread over chicken and beans.
  5. Top with undrained Rotel tomatoes.
  6. Sprinkle cheeses evenly over the tomato layer, then add remaining crushed tortilla chips on top.
  7. Bake for 25-30 minutes until bubbly and cheese is melted.
  8. Garnish with chopped cilantro and diced tomatoes before serving.
