Ingredients

  • 4 cups corn (charred)
  • ½ medium red bell pepper (chopped)
  • ½ small red onion (finely chopped)
  • ½ cup fresh cilantro (chopped)
  • 6 green onions (chopped)
  • 1 jalapeno pepper (diced)
  • ½ avocado (chopped)
  • 4 tablespoons lime juice
  • 2 tablespoons sour cream (or yogurt)
  • 2 tablespoons mayonnaise
  • ½ cup cotija cheese (or feta, crumbled)

Instructions

  1. Cut corn off the cob or use canned/frozen corn. If using frozen, no need to thaw.
  2. Heat olive oil in a large skillet over high heat. Add corn and cook for about 3 to 5 minutes until charred.
  3. Transfer charred corn to a mixing bowl and let cool slightly.
  4. Add remaining ingredients to the bowl and mix well. Adjust lime juice and seasoning to taste.
  5. Serve garnished with extra cheese and cilantro if desired.
