- 2 Large Eggs
- 1/2 cup Buttermilk
- 1/4 cup Vegetable Oil
- 1 tsp Vanilla Extract
- 1/4 cup Hot Water
- 4 oz Andes Mints (for ganache)
- 1/4 cup Heavy Whipping Cream
- 1 cup Unsalted Butter (room temperature)
- 3 cups Sifted Powdered Sugar
- 5–6 tbsp Heavy Whipping Cream
- 3–4 drops Green Food Coloring
- 2 tsp Peppermint Extract
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a mixing bowl, whisk together flour, sugars, cocoa powders, baking powder, baking soda, and salt.
- In another bowl, combine eggs, buttermilk, vegetable oil, vanilla extract, espresso powder (if using), and hot water until smooth.
- Mix the wet ingredients into the dry ingredients until just combined; do not overmix.
- Fill each cupcake liner two-thirds full with batter and bake for 15–20 minutes until a toothpick comes out clean.
- Cool completely before filling with melted Andes mints mixed with cream for ganache.
- Prepare frosting by beating butter, adding powdered sugar gradually, then mixing in cream, food coloring, and peppermint extract until fluffy.
